I think the tastiest Monster Hunter Rise monster would be the Jyrodotus.
Look at that belly. Butterfly the back meat, bake over sticky rice like a casserole and serve it with eel sauce. Clay bake the abdomen, put it on fish tacos with some cabbage and lime. Chop the tail into patties for sandwiches, slap em on a bagel, etc. Those big thighs are gonna be dense, so you cube the meat and use em for gumbo. Grind the head and kama into pate for Bahn Mi.
I'm giving #2 to the Tetranodon.
Frog legs are unironically delicious. Look at those things. I'm cutting off the good fatty bits and deep frying em like popcorn chicken. The rest is getting spit roasted over an open fire and glazed with honey and jam every 30 min.
It's probably a big turtle under its carapace right? Turtle is a lot like veal if you tenderize it enough. I'm thinking you cut out the whole loin, hammer it the hell up, chop it into cubes, and then whole roast it on the shell like a pit bake. Stuff the carapace with herbs and bread crumbs. Use it for stew meat.
Khezu, bar none.
It's a big leech. Escargot is a delicacy, but escargot sucks. There's definitely Monster Hunter far north cultures like "Khezu blood sausage is starvation food, people really shouldn't be eating that" but you have a buddy who brought you to a fancy restaurant like "no try it! C'mon just a little! Try the Khezu escargot!" And it tastes like a rubber eraser soaked in butter and salt.
see i always think the french overcook everything and mollusks are no exception, I think the texture on a Khezu would be closer to a firmer geoduck or perhaps a sea cucumber. I'd probably handle it with more of a chinese angle, though that's probably just my family background talkin
It's got stronger musculature than your average bivalve simply due to the mass of the thing but it's still in the mollusc zone to me, meaning that the meat handles better on a light steam and a nice acidic sauce to dip rather than overbroiled in butter.
